Homemade Ham & Cheese Egg Muffins


Prep Time: 10 minutes | Cook Time: 25 minutes

Yield: 12 muffins

Ingredients:

• 1 dozen eggs

• 1/2 c. milk Coupons

• 1/2 tsp salt

• 1/4 tsp pepper

• 1/2 c. shredded cheddar cheese

• 1/2 c. diced ham

• Optional: chopped red bell pepper, chives)

Instructions:

• Preheat oven to 350 degrees. Spray muffin tin with non stick cooking spray.

• In a large mixing bowl whisk together eggs, milk, salt and pepper. Stir in cheese and ham (bell pepper if desired).

• Pour mixture into 12 muffins cups.

• Bake for 25 minutes or until muffins are set in the middle. Sprinkle with chives.
